Instructions

Make the Meatballs

    Heat oven to 180 C fan.

    Blend chicken, breadcrumbs, garlic, lemongrass, egg, chilli, lime zest, herbs, fish sauce, and salt until smooth.

    Roll into 16 meatballs.

Cook the Meatballs

    Heat oil in a nonstick skillet over medium heat.

    Brown meatballs for 3 to 4 minutes per side.

    Transfer the pan to the oven and bake for 6 to 8 minutes until cooked through.

Prep the Noodles

    Cover noodles with boiling water for 5 minutes, loosening after 2 minutes.

    Drain, rinse with cold water, and drain well.

    Snip once through the noodles to make mixing easier.

Build the Salad

    Toss noodles with carrot, cabbage, beansprouts, and herbs.

Dress and Serve

    Whisk sweet chilli sauce, fish sauce, and lime juice.

    Toss most of the dressing through the salad and divide between plates.

    Coat meatballs in reserved dressing, then add to the plates.

    Finish with peanuts and extra dressing if desired.
