Cook the Rice

    Rinse and cook the rice, then spread on a tray to cool completely.

    Chill the rice until cold, or use leftover cold rice.

Sear the Chicken

    Toss chicken with black pepper, chilli flakes, garlic powder, onion powder, dark soy sauce, light soy sauce, and olive oil.

    Heat butter in a large skillet over medium-high heat.

    Sear chicken in batches until crisp and cooked through, then toss with fresh parsley.

Make the Fried Rice

    Melt butter in the same skillet. Saute onion, spring onion whites, and carrots until softened.

    Push vegetables aside, scramble the eggs, then mix through.

    Add cold rice and season with black pepper, onion powder, dried parsley, dark soy sauce, light soy sauce, and oyster sauce.

    Stir-fry until hot and evenly coated, then fold in spring onion greens.

    Whisk mayo, ketchup, sriracha, minced garlic, ginger powder, and rice vinegar until smooth.
