These creamy coconut sriracha chicken meatballs are juicy, aromatic, and cooked in a silky coconut sauce with lime and coriander.
Blending aromatics into the meat keeps the meatballs tender, while coconut milk and sriracha create a rich, spicy sauce that coats everything.
Chicken breasts keep it lean, breadcrumbs add lightness, and fish sauce brings depth. Lime and coriander brighten the finish.
Blend and shape the meatballs, brown them, then simmer in the coconut sauce until just cooked through. Finish with coriander and toppings.
These reheat well for meal prep. Warm gently and loosen the sauce with a splash of water if needed.

Wet your hands to roll the meatballs cleanly.

Blend chicken, spring onions, garlic, ginger, coriander, sriracha, fish sauce, egg, and breadcrumbs until smooth.
Wet your hands and roll into 16 meatballs.
Heat oil in a large nonstick skillet over medium-high heat.
Brown meatballs for 3 to 4 minutes per side until golden.
Add coconut milk, fish sauce, sriracha, and lime juice and bring to a boil.
Simmer for 4 minutes, turn the meatballs, and cook for 4 to 5 minutes until cooked through and sauce thickens.
Stir in coriander and remove from heat.
Serve immediately with smashed peanuts and chilli oil if desired.
