These meal prep bowls combine cajun chicken, roasted sweet potatoes, and a crunchy salad with a zingy lime-ginger dressing for easy, high-protein lunches.
Mayonnaise helps the cajun seasoning cling to the chicken, keeping it juicy. Roasted sweet potatoes add sweetness, while the fresh salad and bright dressing balance the bowl.
Cajun-spiced chicken brings heat, sweet potatoes add body, and a crunchy mix of romaine, cabbage, and cucumber keeps the bowls fresh. The lime dressing ties everything together.
Roast the sweet potatoes while the chicken cooks in a hot pan. Mix the dressing, prep the salad, and portion everything into containers. Dress just before eating.
Store dressing separately and keep cucumbers seeded for the best crunch. Reheat the chicken and sweet potatoes, then add the salad and dressing when ready to eat.

Whisk lime juice, olive oil, mustard, ginger, sugar, salt, and pepper until smooth.
Combine romaine, cabbage, carrots, red pepper, and cucumber in a large bowl.
Portion salad into containers and pack dressing separately.
Divide chicken and sweet potatoes among the bowls.
Dress the salad just before eating.
