Use cold, day-old rice to prevent soggy fried rice.
You can replace egg whites with 2 extra whole eggs if preferred.
Store in airtight containers and refrigerate up to 3 days.
Reheat thoroughly and avoid letting rice sit out for too long.

Season diced chicken with onion powder, garlic powder, black pepper, and soy sauce.
Cook chicken in a non-stick skillet over medium-high heat until fully cooked. Set aside.
In a small saucepan, combine honey, soy sauce, diced garlic, ketchup, and vinegar.
Simmer for a few minutes until slightly thickened. Add cornflour slurry and stir until glossy.
In the same pan, sauté frozen vegetables and white parts of spring onion for 2–3 minutes.
Push veggies to one side. Add eggs and egg whites, scramble until just cooked.
Add day-old rice and cooked chicken. Stir well to combine.
Pour over the honey garlic sauce and mix until evenly coated.
Add soy sauce, green onions, and drizzle sesame oil to finish.
