Save the poaching liquid—it doubles as a flavourful broth for the rice.
Adjust ginger and garlic in the sauce according to your taste preference.

In a large pot, add chicken, water, ginger, garlic, fish sauce, salt, and chicken powder.
Bring to a boil, then lower heat and simmer until chicken is cooked through, about 40–50 minutes.
