This souvlaki recipe keeps the classic Greek profile: olive oil, oregano, lemon, and juicy chicken skewers. It is simple enough for weeknights and still works for casual hosting.
Baking is used here for convenience, though grilling is also an option.
Olive oil and oregano coat the chicken evenly and help maintain moisture during high-heat cooking. Lemon added at the end brightens the finished skewers without making the meat tough.
Serving with tzatziki and vegetables balances richness and adds freshness.
Chicken breast is lean and quick-cooking; thigh can be used for juicier texture. If using wooden skewers, soak before baking to reduce scorching.
Use fresh lemon juice at serving for best flavor.
Marinate chicken, thread skewers, and bake until golden. Finish with lemon and serve alongside pita, tzatziki, and fresh vegetables.
Refrigerate cooked chicken up to 3 days. Reheat in oven or air fryer for best texture.
