If using bamboo skewers, soak in water for 30 minutes to prevent burning.
In a small pot, combine soy sauce, sherry, chicken broth, ginger, garlic powder, and scallions. Bring to a boil over medium-high heat, then remove from heat and set aside.
Preheat the oven's broiler.
Thread the chicken cubes onto skewers.
Coat a broiler pan with cooking spray and place the chicken skewers on the pan.
Brush each skewer with the sherry sauce.
Place the pan under the broiler until the chicken is browned, about 3 minutes.
Turn each skewer over, brush with sauce again, and return to the broiler until the chicken is cooked through and browned.
