Preheat the oven to 450°F (232°C).

In a small bowl, add honey, mustard, thyme, garlic, salt, and pepper. Mix well to combine.

Place the lamb on a rack in a roasting pan. Rub the honey-mustard mixture onto the lamb.

Roast in the oven for 20 minutes.

Reduce the heat to 400°F (204°C) and roast the lamb for an additional 45 minutes. For medium-rare doneness, the internal temperature should be at least 140°F (60°C).

Let the lamb rest for 10 minutes before carving.
