Sheet pan chicken kebabs with sumac, baharat, and smoked paprika, finished under the grill and served with harissa yogurt and onion salad.
Sheet pan chicken kebabs are shaped directly on a baking sheet, baked briefly, and finished under the grill for a juicy, charred finish.
Blending aromatics into the mince spreads flavor evenly, while the short oven bake keeps the kebabs tender. Harissa yogurt adds creamy heat and the onion salad keeps it bright.
Sumac, baharat, and smoked paprika build a warm spice base, while parsley and lemon keep the plate fresh. Flatbreads make it a complete meal.
Pulse the kebab mix, shape it on a sheet pan, bake, then grill for color. Mix the yogurt and salad while the kebabs cook.
Store kebabs and salad separately. Reheat the kebabs under the grill or in a hot pan to keep them juicy.

Do not overcook or the kebabs will dry out.

Heat oven to 180 C fan and preheat the grill to high.
Blitz onion, garlic, and parsley in a food processor until fine.
Add chicken, tomato puree, sumac, pepper flakes, smoked paprika, baharat, salt, and pepper.
Pulse until combined.
Line and oil a 24 x 32 cm baking sheet.
Spread the chicken mixture out and shape into 8 kebabs.
Drizzle with olive oil and bake for 6 minutes.
Grill for 5 to 6 minutes until cooked through and golden.
Stir yogurt, harissa, garlic, lemon juice, and salt until smooth.
Toss onions with parsley, sumac, lemon juice, and salt.
Serve kebabs with flatbreads, yogurt sauce, and onion salad.
