Soaking the onion in lime juice tames its sharpness and adds a bright citrus note.
Use a salad spinner or spread ingredients on a towel to avoid a soggy salad.

In a large bowl, add couscous, ½ tbsp olive oil, and a pinch of salt.
Pour over 3 cups of hot water, cover, and let sit for 5–10 minutes.
Fluff with a fork, allow to cool, and spin or spread out to remove excess moisture.
Heat a pan over medium-high heat with olive oil.
Sear broccoli florets until lightly browned.
Add a splash of water, cover, and steam for 1–2 minutes until just tender.
Season with salt and allow to cool, then spin dry.
Cube bell pepper and cucumber.
Halve cherry tomatoes and peach slices.
Soak chopped white onion in lime juice for 10 minutes, then drain and spin.
Spin all vegetables and fruit to remove any extra water.
Combine couscous, broccoli, bell pepper, cucumber, tomatoes, peaches, and onion in a large bowl.
Add torn basil and coriander.
Drizzle with olive oil and season with salt to taste.
Toss well and serve at room temperature or chilled.
