This salad depends on sharpness and crunch, so the mango needs to stay firm and the dressing should be balanced just before serving. The sweet-salty lime profile is strong enough that the salad can work as both a side and a contrast to richer grilled dishes.
It is best eaten fresh, while the mango is crisp and the herbs are still lively. If you are prepping ahead, keep the dressing separate until the last minute.
A good mango salad depends more on slicing and balance than on cooking. The mango should stay crisp, the vegetables should be cut fine enough to mingle easily, and the herbs need to stay fresh enough to brighten each bite. If the mango is too ripe, the whole bowl loses the sharp snap that gives the salad its identity.
The dressing should taste slightly stronger than you think it needs to before it hits the vegetables. Lime, fish sauce, sugar, and chili mellow once they are tossed through the salad, especially if the mango is very tart. Peanuts and fried shallots finish the bowl with crunch and a little richness so it does not read as only sour and sharp.
This salad works especially well beside grilled meat, fried fish, or richer rice dishes because it brings acidity and freshness to the table. It can also stand on its own as a light lunch if you add shrimp, grilled chicken, or extra peanuts for more substance. In either case, it is better served immediately than held for too long once dressed.
