Paired with Beignets de Dattes à la Ricotta—crispy fritters stuffed with creamy ricotta and fresh mint—it transforms into a beautifully balanced plate that’s hearty, fragrant, and slightly indulgent.

Substitute ricotta with labneh or fresh goat cheese for a tangy twist.
Make the couscous in advance and reheat gently before serving.

Wash and peel all vegetables.
Slice the onion finely, cut the carrots and courgettes into batons, and quarter the tomato, turnips, and lemon.
Heat olive oil in a large pot and sauté the onion. Add spices and vegetables, pour in stock, and simmer until tender.
Prepare couscous and steam or bake as desired.
Carefully pit the dates without splitting them entirely.
Mix flour, baking powder, cornstarch, egg, water, and fromage blanc into a batter.
Mix ricotta with chopped mint, season with salt and pepper, and stuff the dates with this filling.
Dip the stuffed dates in the batter and deep-fry until golden. Drain on paper towel and season lightly.
Toast pistachios and crush them.
In a large serving dish, combine couscous, grated cauliflower and broccoli, and chickpeas.
Top with crushed pistachios, raisins, and halved date fritters.
Serve the cooked vegetables in a separate dish with fava beans on top.
