A delicious and healthy Mexican-inspired meatloaf made with lean ground turkey, black beans, corn, and a flavorful blend of salsa and enchilada sauce.

Preheat the oven to 200°C (400°F). Coat a 9-inch by 13-inch baking dish with cooking spray.
In a large bowl, combine turkey, black beans, corn, chiles, salsa, taco seasoning, breadcrumbs, and egg whites. Season with salt and pepper, and mix thoroughly.
Add the meat mixture to the prepared baking dish, using clean hands or a spatula to form a loaf shape.
Spread half the enchilada sauce over the meatloaf and bake for 45 minutes.
Remove the meatloaf from the oven and top with the remaining enchilada sauce.
Return to the oven and bake for an additional 10-15 minutes, or until the meatloaf is no longer pink inside. A thermometer should read at least 74°C (165°F).
Remove the meatloaf from the oven and serve.
