It starts with a base of pan-seared potatoes, tossed in olive oil and a blend of herbs, garlic, onion powder, and smoky paprika 🌶️. Then comes the lean beef mince, cooked with Worcestershire sauce, tomato paste, and sautéed onion and garlic for that rich, umami-loaded flavor.
The combo is savory, aromatic, and the kind of thing that smells so good, your neighbors might knock 👃💨.
The egg filling isn’t just your basic scramble. We boost it with extra egg whites and a touch of blended cottage cheese (totally optional!) for added fluffiness and a creamy finish. These eggs hold up beautifully in the fridge or freezer, making them a star player in meal prep.
Heat up your tortillas before assembly to avoid breakage 🔥. Then layer:
Wrap them tight, foil or cling film each one, and stash them in your freezer 🧊. Reheating is a breeze—just microwave and crisp up in the air fryer or oven for that golden tortilla crunch ✨.
