One-pot gochujang chicken rice is a spicy, savory dinner where the stock seasons everything while the rice and chicken cook together.
Gochujang, soy, and sesame oil create a bold, salty broth that infuses the rice. Cooking the chicken directly in the pot keeps it juicy and adds depth.
Basmati rice keeps the texture light, while garlic and ginger add aroma. Spring onions and sesame seeds finish the bowls with freshness and crunch.
Whisk the stock and seasonings, simmer until most liquid is absorbed, then cook low and slow so the rice steams fully. Finish with sliced chicken and toppings.
Let the pot rest off heat for 5 minutes before serving. Leftovers keep well for up to 3 days.

Use 1 tbsp gochujang for a milder bowl and adjust soy after cooking.
Keep the lid on to let the rice steam properly.
Let the chicken rest before slicing for juicier pieces.

Rinse the rice if desired, then add to a saucepan with the chicken.
Whisk stock, gochujang, soy sauce, sesame oil, and vinegar until smooth.
Pour into the pan, then add garlic and ginger and stir.
Bring to a boil over medium-high heat, cover, and reduce to medium.
Cook for 8 to 10 minutes until most of the liquid is absorbed.
Reduce heat to low and cook for 20 to 25 minutes until rice is tender and chicken cooked through.
Remove chicken and fold half the spring onions through the rice to separate.
Slice the chicken and serve over the rice.
Garnish with remaining spring onions, sesame seeds, and sriracha mayo.
