Chicken pieces glazed in a homemade teriyaki-style sauce with soy, ginger, garlic and honey.
This is a fast, pan-glazed chicken rather than a long-cooked teriyaki build. The goal is a glossy sauce that clings to the chicken, with enough ginger and garlic to keep the sweetness from taking over.
It is best served with plain rice and vegetables, because the sauce is already doing a lot of flavour work. If you want a more balanced result, reduce the sugars slightly and add more vegetables alongside the chicken.
The sauce here is intentionally concentrated, which is why the cooking time should stay fairly short. Letting it reduce too far can push the sugar and soy too hard and make the finished chicken taste more like candy than glaze. The best version coats the chicken in a shiny layer without turning sticky or heavy.
Using bite-size pieces also helps because the chicken cooks quickly and gives the sauce more surface area to cling to. That makes the final dish feel more like a proper weeknight stir-fry than a separate sauce poured over plain meat. If bok choy or other vegetables are added, they also help absorb some of the intensity from the glaze.
Because the sauce is sweet-salty and fairly assertive, it works best with plain rice, steamed greens, or lightly cooked vegetables on the side. A neutral base makes the chicken feel more complete and helps with portion balance, especially if you are serving it as a single-bowl meal.
If you make this often, the easiest variation is changing the vegetables rather than rebuilding the sauce. Broccoli, snap peas, cabbage, or mushrooms can all fit into the same pan and make the recipe feel less repetitive across multiple meals.

Stir together the soy sauces, sugars, honey, sesame oil, garlic and ginger.
