Gochujang butter noodles are a 10-minute, glossy bowl with spicy sauce, spring onions, and a crispy fried egg.
Butter softens the heat of gochujang, while noodle water emulsifies the sauce into a silky coating. A fried egg adds richness and texture.
Gochujang brings heat, soy sauce adds salt, and spring onions keep it fresh. Chilli oil and sesame seeds finish it with extra punch.
Cook noodles, fry an egg, then toss everything together in a quick butter-gochujang sauce. Serve hot with toppings.
This is best eaten immediately. If you need to reheat, add a splash of water and toss over low heat.

Reserve noodle water to help the sauce emulsify.
Keep the heat low when adding gochujang so it does not scorch.
Use any quick-cook noodles you like.

Cook noodles in boiling water until al dente, then reserve a little cooking water and drain.
Heat oil in a small nonstick skillet over medium heat.
Fry the egg for 2 to 3 minutes until the white is set and edges are crisp.
Melt butter in the noodle pan over low heat.
Stir in gochujang, soy sauce, noodles, spring onion, and 2 tbsp noodle water.
Toss until glossy.
Transfer noodles to a bowl, top with the fried egg, and finish with chilli oil and sesame seeds if desired.
