Juicy Aussie chicken baked with crispy bacon, mushrooms, honey-mustard sauce, and melted Monterey Jack cheese. A hearty, high-protein dinner everyone loves.
Looking for a hearty, protein-packed dinner that’s both comforting and flavorful? Aussie Chicken is a savory main course layered with smoky bacon, earthy mushrooms, tangy honey-mustard sauce, and gooey Monterey Jack cheese. 🥓🧀 This recipe, adapted from Michael Matthews by JojoM, is oven-baked to perfection—making it a wholesome yet indulgent dish you’ll want to make again and again.
The juicy chicken breasts are marinated with seasoning salt, pan-seared in bacon fat for extra depth, and finished in the oven. The honey-mustard sauce ties it all together with sweet and tangy notes, while melted Monterey Jack cheese gives the dish its irresistible creamy finish. Fresh parsley on top adds a burst of color and freshness.
Q: Can I make Aussie Chicken ahead of time?
Yes! Assemble the dish (without baking) up to a day in advance. Store covered in the fridge and bake when ready to serve.
Q: What’s the best substitute for bacon?
Turkey bacon works well if you want a leaner option, though the flavor will be slightly different.
Q: Can I use chicken thighs instead of breasts?
Absolutely! Chicken thighs add extra juiciness but may require a slightly longer baking time.
Q: How do I store leftovers?
Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
This Aussie Chicken recipe brings together everything you love in a home-cooked dinner: flavor, comfort, and a touch of indulgence. 🥰 Whether for weeknight meals or entertaining guests, it’s a dish that always delivers.

Rub the chicken breasts with seasoning salt, cover, and refrigerate for 30 minutes.
Preheat the oven to 175°C (350°F).
Cook the bacon in a large skillet over medium-high heat until crisp, then transfer to a paper towel-lined plate and set aside. Leave bacon fat in the skillet.
In a medium bowl, mix mustard, honey, mayonnaise, and onion flakes.
Warm the bacon fat over medium heat. Add the chicken and cook until browned, about 3 to 5 minutes per side.
Transfer the chicken to a 9-inch by 13-inch baking dish. Brush the chicken with the honey-mustard sauce, then layer with mushrooms and bacon. Sprinkle with cheese.
Bake for about 15 minutes, until the cheese melts and the chicken juices run clear. Garnish with parsley.

This tasted just like the Outback Aussie Chicken I used to order! The honey mustard sauce is spot on.
