Hainanese chicken rice looks simple on the plate, but the dish depends on doing the basics well. The chicken should stay tender, the rice should absorb the broth, and the sauces need enough sharpness to keep the meal from feeling flat.
Using darker chicken pieces helps with both flavor and moisture, especially in a home kitchen where poaching temperature can vary. The broth left behind does most of the heavy lifting for the rice, so saving and seasoning it properly matters.
Serve the chicken chopped or sliced with rice and sauces on the side so each person can adjust the balance. Any extra broth also works well as a light soup.

Chop the chicken into portions and serve with rice, ginger sauce, and condiments.
