These air fryer chicken skewers are built for weeknights when you want charred edges and juicy chicken without setting up an outdoor grill. Chicken thighs are marinated in a simple paprika, garlic, lemon, and mayo mixture that helps the surface brown while keeping the middle tender.
The garlic butter is added in stages instead of all at once. A light baste halfway through cooking seasons the chicken, then the reserved butter is brushed on after cooking so the garlic, parsley, and parmesan stay bright instead of turning muddy in the fryer basket. Serve the skewers with rice, flatbread, or a sharp cucumber salad to balance the richness.
Expect savory, deeply seasoned chicken with a buttery finish, gentle chili heat, and enough lemon to keep the skewers from tasting heavy. Parmesan melts into the butter and adds a salty, nutty edge rather than a thick cheesy crust.

If using wooden skewers, soak them in water for 15 minutes.
Cut chicken into large bite-sized pieces.
Mix marinade ingredients in a bowl, then toss with the chicken.

Preheat the air fryer to 190C (375F).
Skewer the marinated chicken.
Cook for 7 to 8 minutes, baste with garlic butter, and flip.
Cook another 7 to 8 minutes, baste again, and flip.
For crispy edges, increase to 205C (400F) for 2 to 3 minutes.
Rest 5 minutes, then brush with reserved garlic butter and garnish.
