A comforting French-style dish of peas with sautéed onions, lettuce, and sausages, finished with a touch of mint and crispy croutons.
If you're looking for a dish that’s warming, rustic, and unbelievably simple, this French-style peas and sausages recipe is exactly what you need. Petits Pois à la Française is already a beloved staple in French home cooking—but add tender sausage pieces, smoky lardons, fresh mint, and crunchy croutons, and it becomes a complete comfort meal that works any night of the week. 🥘💚
What makes this recipe shine is the harmony of textures and flavours: buttery peas, soft lettuce, fragrant onions, and savoury sausage brought together in a light broth that feels both homely and elegant. Whether you use fresh peas in spring or frozen ones for convenience, the result is always satisfying.
This classic combines the sweetness of peas with savoury cured meat for a cosy, nourishing bowl. The addition of mint adds brightness, while the croutons bring the perfect crunch to contrast the tender vegetables. It’s quick, requires minimal equipment, and is ideal for weeknights or casual dinners.
Since it’s adaptable, you can easily change the protein—ham, smoked fish, or tofu make great alternatives. And because everything cooks gently in one pot, the flavours meld together beautifully without any fuss.
Peas are the heart of the dish—fresh when in season, frozen when you’re pressed for time. Romaine lettuce melts into the broth, adding a delicate sweetness, while onions and spring onions form the aromatic base. Smoky bacon lardons provide depth, and frankfurter-style sausages bring a comforting savouriness. A small dose of bouillon enhances everything without overpowering the natural flavours.
Fresh mint, added near the end, lifts the dish with its clean herbal notes, keeping things vibrant and spring-like. Don’t skip the butter—it rounds out the flavour and brings the whole pot together.
Start by blanching the peas to keep them vibrant and tender. Render the bacon for flavour, then build your aromatics with onions. The sausages add body, while the lettuce and mint soften into the broth for a comforting, spoonable texture. Croutons sprinkled on top just before serving add a golden, irresistible crunch.
It’s the kind of meal you want to serve straight from the cocotte at the table—family-style, warm, and inviting.
