A spicy shrimp pasta tossed with garlic-infused olive oil, gochujang and chilli flakes.
This pasta is built around speed, so the sauce stays intentionally simple. Gochujang gives heat, savouriness and a little sweetness all at once, which means the garlic oil only needs pasta water to turn into a glossy coating.
Shrimp cooks very quickly, so it is best added near the end and finished in the pan with the pasta rather than cooked fully on its own first. That keeps the texture springy instead of dry.
For a more balanced plate, serve smaller pasta portions with a side salad or add quick-cooked greens to the pan. A squeeze of lemon at the end can also sharpen the sauce without needing extra salt.
Con diablo-style pasta needs enough heat to feel lively, but it still works best when the sauce stays glossy instead of thick and sticky. Gochujang brings chili, salt, and a little sweetness all at once, so the reserved pasta water helps turn those strong flavors into a coating rather than a paste.
Shrimp is the other place where timing matters. It should finish just until springy and opaque, because the pasta and sauce still give it a little more heat once everything is tossed together.
This is strongest as a fast dinner while the shrimp is still tender and the sauce is loose enough to cling to the noodles. A salad or simple vegetable side helps if you want the meal to feel more balanced.
If you like brighter flavors, lemon or a small amount of chopped herbs can lift the heat without muting it.
