Rub both sides of pork chops with the spicy seasoning blend.
Coat a large nonstick skillet with cooking spray and warm over medium-high heat. Add onion and jalapeño, sautéing for 2 minutes until slightly tender. Push the mixture to one side of the skillet.
Add pork chops on the other side of the skillet. Cook for 3 minutes per side, turning once so both sides are evenly browned.
Add the diced tomatoes to the skillet. When the liquid begins to boil, reduce heat to low and cover. Cook for 6 to 8 minutes, until the pork chops are no longer pink in the center.
Serve the pork chops, spooning the sauce over them.
