Sweet caramelized onions, garlic, Parmesan, and chili crisp come together in a creamy spaghetti that feels cozy and bold.
This spaghetti leans on two pantry staples that become something special with time: onions and garlic. Slowly caramelized onions bring sweetness and depth, while garlic gives the sauce its savory backbone. A spoonful of chili crisp adds heat and texture, and cream plus Parmesan turn everything silky. It is a simple, weeknight-friendly pasta with bold flavor that tastes much more complex than its ingredient list suggests.
The sauce is sweet, savory, and gently spicy. Caramelized onions create a jammy base, while garlic adds pungent warmth. Chili crisp brings a toasted chili aroma and little crunchy bits, and Parmesan adds a nutty, salty finish. The cream keeps the heat rounded and smooth.
Onions are the star here, and the slow cook is worth the time. Butter and olive oil help them brown without burning. Chili crisp supplies heat and texture in one jar, while cream and Parmesan make the sauce cling to the pasta. If you use soy sauce, it boosts umami without extra work.
Start the onions first, giving them time to soften and turn golden. While they cook, boil the pasta and reserve some starchy water. Once the onions are caramelized, add garlic and seasonings, then stir in chili crisp and cream. Melt the Parmesan into the sauce, then toss the spaghetti to coat. A splash of pasta water loosens and emulsifies everything into a glossy finish.
Keep the heat moderate and stir often so the onions brown evenly. If the pan dries out, add a spoonful of water to prevent scorching. Use freshly grated Parmesan for the smoothest sauce. Add pasta water in small amounts so the sauce stays creamy, not thin.
Use coconut milk for a dairy-free option and pair it with a plant-based Parmesan. Swap spaghetti for linguine or bucatini. If you want more heat, add extra chili crisp or a pinch of crushed red pepper. For a milder version, use a smaller amount of chili crisp and add more herbs.
Caramelize the onions a day ahead and store them in the fridge, which cuts cooking time in half. The sauce comes together quickly once the onions are ready. Leftovers reheat well with a splash of water in a covered skillet.
Onions are inexpensive and stretch easily, so this is a great low-cost pasta. Use a smaller amount of Parmesan and rely on chili crisp and seasonings for flavor. Store-brand cream works well here because the onions carry the dish.
Use olive oil only and replace the butter with more oil. Swap half the cream for low-fat milk thickened with a teaspoon of cornstarch, and use a lighter Parmesan portion. These changes keep the flavor while reducing saturated fat.
