This is a straightforward pork chop dinner built around a quick glaze rather than a long marinade. The pork cooks first, then the plum sauce and mustard are brushed on while the chops are still hot, which keeps the method fast and helps the glaze stay bright instead of burning in the pan.

It works well for weeknights because the ingredient list is short and the sauce does not need much adjustment. Plum sauce brings sweetness and fruit, while the mustard sharpens the finish enough to keep the chops from tasting flat.

Why This Recipe Works

Because the glaze is added after cooking, you get better control over both the pork and the sauce. The chops can sear properly without the sugars in the plum sauce catching too early, and the final glaze stays glossy instead of turning sticky and dark.

Mustard is a small detail here, but it matters. It cuts through the sweetness of the plum sauce and gives the glaze a sharper savoury edge that works better with pork than a purely sweet coating.

Chinese plum sauce does most of the heavy lifting in the glaze, so there is no need to overcomplicate it. If you want a slightly sharper finish, the comment about adding a little rice vinegar is a sensible variation.

How to Make It

Season the pork chops first and sear them in a hot pan until just cooked through. While they finish, stir the plum sauce and mustard together in a small bowl so the glaze is ready to go.

Once the chops are off the heat, brush on the glaze while they are still warm. Let them rest briefly before serving so the juices settle and the glaze has a moment to cling to the surface.

Tips, Storage, and Variations

If your pork chops are thicker than average, lower the heat slightly after the initial sear so they can finish cooking without burning outside.

These chops are best fresh, but leftovers can be reheated gently and sliced for rice bowls or noodles. Steamed greens, broccoli, or bok choy make the cleanest side dishes because they do not compete with the sweet-savoury glaze.

Serving & Goal Fit

One serving is one pork chop. For a training day, add +50 g cooked rice or a piece of fruit if the meal needs more carbohydrate around the pork.

For a rest day, keep the same chop portion and pair it with more vegetables and less rice. Chicken thigh, chicken breast, or tofu can work with the same glaze, and broccoli, green beans, spinach, courgette, or mushrooms are easy vegetable swaps.
