This Malaysian-style prawn noodle stir-fry is a fast, punchy dish with oyster sauce, garlic, chilli, and crisp vegetables.
Quickly searing the prawns keeps them juicy, while a simple sauce coats the noodles without weighing them down. High heat keeps the vegetables crisp.
Oyster sauce and dark soy build savory depth, rice wine adds balance, and sesame oil rounds it out. Fresh aromatics make the noodles fragrant and bright.
Cook the prawns first, stir-fry the veg, then toss everything with noodles and sauce. Finish with spring onions, coriander, and fish sauce to taste.
This is best eaten fresh. If you store leftovers, reheat quickly over high heat to keep the noodles springy.

Heat half the oil in a pan or wok over high heat.
Stir-fry prawns for 1 to 2 minutes until just cooked, then remove.
Whisk oyster sauce, rice wine, dark soy, sesame oil, and pepper.
Heat the remaining oil, then stir-fry garlic, ginger, and chilli for 10 seconds.
Add onion and carrot and cook for 2 minutes.
Add cabbage and beansprouts and cook for 1 to 2 minutes until crisp-tender.
Add noodles, water, and sauce and stir-fry for 2 to 3 minutes until hot.
Return prawns to the pan and toss to coat.
Remove from heat and stir in spring onions and coriander.
Season with fish sauce to taste.
