This creamy coconut noodle dumpling soup is a fast, spicy bowl built on red curry, peanut butter, and coconut milk with dumplings and udon cooked right in the broth.
Simmering the curry paste with peanut butter creates a rich, balanced broth without extra steps. Frozen dumplings and cooked udon make it quick, while lemongrass and lime keep the soup bright.
Red curry paste provides the heat, peanut butter adds body, and coconut milk softens the spice. Choi sum and eggs add freshness and protein.
Whisk the broth ingredients, simmer to develop flavor, then cook the dumplings and noodles directly in the soup. Finish with eggs, coriander, sesame, and chilli oil.
This is best eaten fresh. If you store leftovers, keep noodles and broth separate so the noodles do not soak up too much liquid.

Whisk the curry paste and peanut butter well to keep the broth smooth.
Add lime juice at the end if you want a brighter finish.

Combine red curry paste, peanut butter, garlic, ginger, coconut milk, chicken stock, lemongrass, fish sauce, and lime juice in a saucepan.
Bring to a boil over medium heat, whisking until smooth.
Cover, reduce heat to low, and simmer for 10 minutes.
Increase heat to a gentle bubble and add the dumplings.
Cover and cook for 5 to 6 minutes until the dumplings float.
Add udon noodles and choi sum, cover, and cook for 2 to 3 minutes until the noodles separate and greens wilt.
Divide dumplings, noodles, and broth between bowls.
Top with eggs, coriander, black sesame seeds, and chilli oil.
