This Thai green noodle dumpling soup is a quick, fragrant bowl built on coconut milk, green curry paste, and fresh udon with dumplings and eggs.
Warming the curry paste first deepens flavor, while lemongrass and kaffir leaves add aroma. Dumplings cook straight in the broth for a one-pot finish.
Green curry paste brings heat, coconut milk softens it, and udon makes it hearty. Beansprouts and coriander keep the bowl fresh and light.
Simmer the broth to develop flavor, then add dumplings and noodles. Finish with eggs, herbs, sesame seeds, and a drizzle of chilli oil.
This is best served fresh. If you store leftovers, keep noodles separate and reheat the broth gently.

Start with less curry paste and add more to taste.
Add sugar only if you want a rounder, sweeter broth.
Blend coriander and spinach for a brighter green finish.

Heat green curry paste, garlic, and ginger in a saucepan over medium heat for 30 seconds.
Add coconut milk, stock, lemongrass, kaffir leaves, fish sauce, and lime juice.
Bring to a boil, cover, reduce to low, and simmer for 10 minutes.
Taste and add more fish sauce or sugar if needed.
Blend coriander, spinach, and water until smooth.
Stir into the broth for a brighter green color.
Bring the soup to a gentle bubble and add dumplings.
Cover and cook for 4 to 5 minutes until floating.
Add udon noodles, cover, and cook for 2 to 3 minutes until separated.
Divide noodles, dumplings, and broth between bowls.
Top with eggs, beansprouts, coriander, sesame seeds, and chilli oil.
