This honey garlic chicken breast recipe takes the same sticky-sweet direction as honey garlic pork belly, but makes it leaner and easier to use as a weeknight main. Chicken breast is browned quickly, tossed with broccoli, green beans, carrots, and mushrooms, then coated in a honey, soy, mirin, garlic, and chili glaze.

The result is glossy and savory-sweet without shallow-frying or using butter. Serve it over rice for a complete bowl, or keep the rice portion smaller and add more vegetables when you want a lighter plate.

Why This Recipe Works

Chicken breast can dry out if it is simmered for too long, so the recipe cooks it in two short stages. First, the chicken browns with a light cornflour coating. Then it returns to the pan only long enough to catch the glaze.

Mirin gives the sauce the same rounded sweetness you would expect from a sticky pork belly glaze. Rice vinegar keeps the honey from tasting flat, while garlic and chili flakes add enough sharpness to balance the sweetness.

Ingredient Notes

Use boneless, skinless chicken breast and cut it into even bite-size pieces. A small amount of cornflour helps the surface brown and gives the sauce something to cling to without creating a heavy fried coating.

Reduced-sodium soy sauce is the better default because the glaze reduces in the skillet. If you only have regular soy sauce, start with a little less and adjust at the end.

How It Comes Together

Brown the chicken first, then remove it before cooking the vegetables. This keeps the chicken from overcooking while the broccoli, green beans, carrots, and mushrooms soften.

The sauce goes in near the end. Once it bubbles, add the slurry and toss until everything looks glossy. If the sauce tightens too quickly, add water one tablespoon at a time.

Tips, Variations, and Storage

  • Keep the heat at medium once the honey glaze goes in so it does not burn.
  • Add more chili flakes if you want a hotter finish.
  • Use brown rice if you want more fiber, keeping the cooked portion similar.
  • Swap green beans or carrots for spinach, peas, onions, courgette, frozen mixed veg, or tenderstem broccoli.
  • Store leftovers for up to 3 days and reheat with a splash of water.

Low-Cholesterol Notes

This version is more cholesterol-aware than a pork belly or fried butter-glazed version because it uses skinless chicken breast, measured olive oil, no butter, and a vegetable-heavy bowl format. It is still a chicken dish, so it is not cholesterol-free, but the serving is lean and practical.

For an even lower-cholesterol meal, use 450 g chicken breast and add 250 g shelled edamame or use firm tofu in place of part of the chicken.

Serving & Goal Fit

Use 1 serving as a full bowl: one-quarter of the chicken, vegetables, glaze, and about 180 g cooked jasmine rice. On training days, add +50 g cooked rice or +1 piece of fruit. On rest days, reduce carbs slightly by removing about 50 g cooked rice.

Protein swaps that fit this glaze well: use shrimp for a quick-cooking option, or use firm tofu for a plant-based version. Practical vegetable substitutions include broccoli, green beans, spinach, peas, mushrooms, onions, courgette, frozen mixed veg, and tenderstem broccoli.

Can I use chicken thighs?

Yes. Use boneless, skinless thighs and cook them a little longer if needed. Chicken breast is the leaner default for this version.

Can I make it without mirin?

Yes. Use rice vinegar with a small pinch of sugar, or use water with a splash of apple cider vinegar. The flavor will be a little sharper but still balanced.

How do I keep the sauce glossy?

Let the sauce bubble before adding the slurry, then toss constantly until it coats the chicken. If it gets too thick, add a spoonful of water and toss again.
