Honey lemon chicken is one of those quick dinners that depends on contrast. The chicken needs a crisp coating, while the sauce should be glossy and sharp enough to keep the sweetness from taking over.

This version keeps the ingredient list short and the cooking time fast. Once the chicken is fried, the sauce comes together in a separate pan and gets added right before serving so the coating stays as crisp as possible.

It works well with rice, but it also fits a lighter plate with greens or a simple cucumber salad on the side.

What Helps The Coating Stay Crisp

Cassava starch gives the chicken a light, brittle crust, especially if the oil is already fully heated before frying. If the oil is too cool, the chicken will absorb more fat and lose some crunch.

It also helps to toss the chicken in the sauce just before eating rather than letting it sit. That keeps the outside glossy instead of soggy.

Serving And Storage Notes

Serve this right away while the sauce is warm and the chicken still has crisp edges. Fresh lemon wedges on the side can help if you want a brighter finish.

Leftovers keep for about 2 days in the refrigerator, though the texture is best on the first day. Reheat in an oven or air fryer instead of the microwave if you want to restore some crunch.

If you are cooking for more than one person, hold the fried chicken on a rack while the sauce finishes. That short pause keeps steam from softening the crust before everything comes together.

    Marinate chicken chunks with sea salt, black pepper, soy sauce, ginger powder, water, and cassava starch.

    Coat marinated chicken in additional cassava starch for extra crunch.

    Fry the chicken until golden brown and crispy.
