Chicken Alfredo pasta is the kind of creamy dinner that feels substantial without needing a long braise or oven time. The chicken and mushrooms give the sauce more depth, while the cream keeps the noodles coated enough to feel like a full meal rather than just pasta with a topping.
This version uses wine and lemon juice to keep the sauce from tasting too flat. Even a small amount of acidity helps balance the richness once the cream and cheese come together.
It is a good dish for weeknights, but it also holds up for casual entertaining because the components are familiar and the final toss is fast.
Cook the chicken and mushrooms long enough to build flavor before the cream goes in. If the pan is rushed, the sauce can taste rich but shallow.
The pasta should also be added while still hot and slightly underdone. That gives it a chance to finish in the sauce and hold onto it better.

Heat the butter and olive oil in a pan.
Sweat the finely chopped onions.
Add the minced garlic.
Add the chicken breast strips, seasoning with salt.
Add the chopped button mushrooms.
Add the white wine and lemon juice.
Let it boil until the alcohol evaporates.
Add the cream and bring to a boil.
Season with salt and pepper.
Add cooked pasta to the sauce and toss to combine.
Top with grated cheese and parsley.
