Fry or bake the breaded chicken until the crust is set before adding sauce and cheese. If that step is rushed, the cutlet softens too quickly in the oven.

Preheat oven to 200°C (400°F).
Season the chicken breasts on both sides with salt and pepper.
Dredge each chicken breast in flour and shake off excess.
Dip the chicken in the beaten eggs, then in the breadcrumb mixture, pressing to adhere.
Heat the oil in a large frying pan over medium heat.
Add the chicken and cook until golden brown, about 4-5 minutes per side.
Pour the tomato sauce into a baking dish.
Place the chicken on top of the sauce.
Top each chicken breast with mozzarella cheese.
Bake for 15-20 minutes, or until the cheese is bubbly and the chicken is cooked through.
Top with fresh basil before serving.
