A quick tuna melt made with a creamy tuna filling, sliced cheese and toasted bread.
This sandwich works because the filling stays creamy while the bread and cheese bring the toast and melt you expect from a classic tuna melt. Sweetcorn and onion add enough texture that the filling does not feel flat.
If you want a more balanced lunch, serve it with a crunchy salad or sliced vegetables rather than adding more filling. It is best eaten hot, while the cheese is still soft and the bread is crisp.
Tuna melts are easy to overfill, which usually leads to bread that browns before the center heats through. A moderate layer of tuna mixture and just enough cheese to melt through the middle gives a better ratio and makes the sandwich easier to toast evenly in a pan. The small amount of sweetcorn also helps break up the texture without turning the filling watery.
Spice level is easiest to control in the mayonnaise base rather than by adding hot sauce at the end. Mixing the sriracha through first gives a more even heat and keeps one bite from tasting much hotter than the next. If you want more brightness, a squeeze of lemon works better than extra mayonnaise.
This is best treated as a fast lunch rather than a sandwich to hold for hours. The filling can be mixed ahead, but the bread should be toasted only when you plan to eat it so the crust stays crisp and the cheese stays stretchy. That is what makes the sandwich feel satisfying instead of merely convenient.
If you are packing lunch, keep the tuna mixture chilled and assemble the toast fresh at home or reheat it in a sandwich press. Pairing it with cucumber sticks, tomato slices, or a sharp side salad makes the richness easier to balance.
