The sauce is the heart of the dish: a blend of dark soy, light soy, mushroom sauce, Shaohsing wine, and a touch of golden syrup. Sweet, salty, savoury, and aromatic all at once. Once everything hits the wok, the flavours coat the vegetables beautifully without turning them soggy.

Use whatever vegetables you have on hand.
Toast the cashews for more flavour.
Make it vegan by using maple syrup instead of golden syrup.

Heat a wok over high heat until smoking.
Add the rapeseed oil and swirl to coat the wok.
Add the garlic, ginger, red chili, and red onion. Toss for a few seconds.
Add the smoked tofu and dark soy sauce. Toss briefly.
Add the carrot, red pepper, and spring onions. Season with Shaohsing rice wine.
Add the mushroom sauce, light soy sauce, and golden syrup. Toss everything together.
Finish with toasted sesame oil, then stir in the roasted cashew nuts.
Serve hot with jasmine rice and sprinkle with black sesame seeds.
