A delicious, protein-packed beef stroganoff made with tender beef tenderloin, mushrooms, and a creamy sauce served over egg noodles.
There’s something truly comforting about a classic Beef Stroganoff — tender slices of beef in a rich, creamy sauce with mushrooms and onions, all spooned over warm egg noodles 🍜. This version is not only hearty and satisfying but also protein-packed and perfect for a quick weeknight dinner.
When browning the beef, make sure not to overcrowd the pan — it helps lock in flavor and keeps the meat juicy. Deglazing with white wine lifts all the delicious fond (brown bits) from the pan, creating a deeper sauce base.
Adding sour cream and cream cheese at the end ensures your sauce stays smooth and silky without curdling. 😋
Serve this creamy beef stroganoff over buttered egg noodles, mashed potatoes, or even cauliflower mash for a low-carb twist. Pair with a side of steamed greens or a crisp salad for a complete meal.
“This was absolutely delicious! I loved how creamy the sauce was, and it was so easy to make.”

Can I use another cut of beef?
Yes! You can use sirloin or flank steak as alternatives. Just be sure to slice them thinly against the grain.
Can I skip the wine?
Absolutely — replace it with an equal amount of beef broth or even a splash of apple cider vinegar for acidity.
Is this suitable for meal prep?
Yes. Make the sauce ahead and keep it separate from the noodles until serving for best texture.
✨ Whether it’s a cozy dinner for two or a meal to impress, this Beef Stroganoff delivers comfort, nutrition, and flavor in every bite. Try it once — it might just become your go-to weekday favorite! ❤️

Bring a large pot of lightly salted water to a boil over high heat. Cook noodles according to package instructions. Drain and reserve.
Meanwhile, season meat with salt and pepper. Warm oil in a large skillet over medium heat. Add beef; brown on all sides and then push to one side of the pan.
Add onion and mushrooms, cooking until tender, about 3 to 5 minutes. Push to the side with beef. In a small bowl, combine cornstarch with 2 tablespoons cold beef broth. Add to the skillet and mix with juices in the pan to deglaze.
Pour in remaining beef broth. Bring to a boil, stirring frequently. Reduce the heat to low and stir in mustard, garlic, wine, and Worcestershire sauce. Cover with a tight-fitting lid and simmer for 10 minutes.
Two minutes before beef is done, stir in sour cream and cream cheese. Stir well and allow beef to finish cooking in the sauce. Let meat rest for 5 minutes and serve.
