Preheat the oven to 350°F (175°C).

Warm oil in a large nonstick skillet over medium-high heat. Add beef, onion, oregano, and pepper. Cook for 6-8 minutes, breaking the meat into small pieces. Stir in tomato sauce, bring to a boil, and remove from heat.

In a small bowl, mix ricotta and Parmesan.

To build the lasagna, layer ingredients in a 9-inch by 13-inch baking dish: Start with 1/2 cup sauce, 2 noodles, and 1/2 cup cheese mixture. Add another 1/2 cup sauce and half the zucchini slices. Continue layering with 2 noodles, the remaining 1/2 cup cheese mixture, 1/2 cup sauce, and remaining zucchini slices. Top with the remaining 1/2 cup sauce and 2 noodles.

Cover the dish with foil and bake for 30 minutes. Remove the foil and continue baking for 15 more minutes.

Remove from oven and let sit for at least 10 minutes before cutting to serve.

This lasagna was delicious and surprisingly light! The zucchini added a nice crunch.
