- 1Preheat the oven to 350°F (175°C). 
- 2Warm oil in a large nonstick skillet over medium-high heat. Add beef, onion, oregano, and pepper. Cook for 6-8 minutes, breaking the meat into small pieces. Stir in tomato sauce, bring to a boil, and remove from heat. 
- 3In a small bowl, mix ricotta and Parmesan. 
- 4To build the lasagna, layer ingredients in a 9-inch by 13-inch baking dish: Start with 1/2 cup sauce, 2 noodles, and 1/2 cup cheese mixture. Add another 1/2 cup sauce and half the zucchini slices. Continue layering with 2 noodles, the remaining 1/2 cup cheese mixture, 1/2 cup sauce, and remaining zucchini slices. Top with the remaining 1/2 cup sauce and 2 noodles. 
- 5Cover the dish with foil and bake for 30 minutes. Remove the foil and continue baking for 15 more minutes. 
- 6Remove from oven and let sit for at least 10 minutes before cutting to serve.
