Instead of thin beef, this version uses chicken breast chunks with a short marinade so the meat stays soft. That keeps the dish lighter, more affordable, and still satisfying enough for a rice bowl dinner.
The chicken gets a simple velveting-style marinade with soy sauce, rice wine, and a small amount of baking soda. That short rest helps the breast stay more tender without turning the texture overly soft.
