This sweet chili chicken breast stir-fry is built around the kind of glossy, quick-cooking chicken you might want from a hot bento, but the method is tuned for a home kitchen and a Tesco shop. Thin slices of chicken breast are velveted with soy sauce, rice wine, and a little baking soda, then seared in a hot stainless steel pan before being coated in a sweet chili sauce.
Keeping the vegetables on the side changes the whole feel of the dish. Instead of turning it into a generic mixed stir-fry, it lets the chicken stay glossy and concentrated while the broccoli and carrots act more like the bento vegetable section alongside the rice.
The sauce lands sweet first, then lightly savory and tangy from the soy and rice vinegar. Ginger and garlic keep it from tasting flat or sugary, while the velveted chicken breast stays soft enough to feel closer to takeaway-style chicken than a standard home stir-fry.
Because the vegetables are served separately, the bowl keeps a clearer contrast: sticky chicken, plain rice, and clean green-and-orange vegetables rather than everything tasting of the same sauce.

Set aside for 15 minutes while you prepare the sauce and vegetables.
Stir together the sweet chili sauce, soy sauce, rice vinegar, water, cornflour, garlic, and ginger in a bowl until smooth.
Steam or boil the broccoli and carrots until just tender, about 4 to 5 minutes.
Drain well and season lightly with salt.
Heat a stainless steel frying pan over medium-high heat until hot, then add a light film of oil.
Add half the chicken in a single layer and leave it undisturbed for 45 to 60 seconds so it sears. Toss and cook until nearly done, about 2 to 3 minutes total. Transfer to a plate and repeat with the remaining chicken.
Return all the chicken to the pan, pour in the sauce, and toss for 30 to 60 seconds until the sauce turns glossy and coats the chicken.
Turn off the heat and scatter over spring onions and sesame seeds if using.
Spoon the rice into bowls or lunch containers.
Add the sweet chili chicken on one side and the broccoli and carrots on the other.

I used dry sherry because that was easier to find than Shaoxing and it still worked well. The stainless steel pan got a nice sear once it was properly hot.

Good meal prep option. I kept the broccoli on the side and that stopped the sauce from turning watery in the containers.

The chicken stayed much more tender than my usual stir-fry chicken. I had sweet chili sauce already, so this was easy to pull together.
