This creamy turkey, leek, and bacon pie is a festive leftover favorite with a rich, savory filling and a crisp puff pastry top.
Crispy pancetta adds depth, while leeks and garlic soften into a sweet base. Flour thickens the creamy sauce, and mustard plus lemon zest keep the filling bright and balanced.
Leftover turkey makes this easy after the holidays, and puff pastry keeps the topping quick. Double cream and mustard create a luscious sauce without complicated steps.
Crisp the bacon, soften the leeks, then build the sauce in the pan before adding the turkey. Top with puff pastry and bake until golden and bubbling.
Cool leftovers quickly and refrigerate for up to 3 days. Reheat in the oven to keep the pastry crisp.

Preheat the oven to 200 C fan.
Heat a large nonstick skillet over high heat and cook pancetta for 6 to 8 minutes until crisp.
Remove with a slotted spoon and set aside.
Add olive oil to the pan, then cook leeks with salt and pepper for 5 to 6 minutes until softened.
Add garlic and cook for 30 seconds until fragrant.
Transfer to a saucepan if needed, then stir in the bacon and flour.
Pour in water, stir, and cook for 1 to 2 minutes until thickened.
Add turkey, cream, mustard, and lemon zest, then cook until creamy and well mixed.
Taste and adjust seasoning.
Spoon the filling into a pie dish or baking tin.
Top with puff pastry, crimp or tuck in the edges, and cut small steam slits.
Brush with egg wash, season lightly with salt, and bake for 20 to 25 minutes until golden.
