Roast cherries until syrupy for a deep jam-like flavor.
Swirl cherries in at the end of churning to keep streaks vibrant.

Preheat oven to 190°C (375°F).
Toss cherries with sugar and lemon juice, spread on a baking sheet.
Roast 8–10 minutes until soft and syrupy. Cool completely.
In a small bowl, whisk 2 tbsp milk with cornstarch to make a slurry.
In another bowl, whisk cream cheese, goat cheese, and salt until smooth.
In a saucepan, combine remaining milk, cream, sugar, and corn syrup. Bring to a rolling boil for 4 minutes.
Remove from heat, whisk in cornstarch slurry, then return to boil for 1 minute until slightly thickened.
Slowly whisk hot mixture into cheese mixture until silky.
Chill mixture quickly in an ice bath for 30 minutes.
Pour into ice cream maker and churn until thick and creamy.
Layer churned ice cream with spoonfuls of roasted cherries for a swirl effect.
Press parchment against surface and freeze at least 4 hours.
