Camille R Colmenares

Make the most loved Pinoy-style Carbonara β rich, cheesy, and delightfully creamy! Loaded with bacon, ham, mushrooms, and all-purpose cream, this Filipino twist is a party favourite for holidays and celebrations.
When it comes to Filipino-style party food, nothing says handa quite like a huge tray of creamy carbonara π½οΈ. But unlike the classic Italian version, which is eggy and light, the Filipino carbonara is unapologetically rich, cheesy, and indulgent β exactly what youβd expect at a fiesta table surrounded by pancit, lumpia, and lechon.
This playful version by Camille Colmenares (@camillecolmenares1) has become a crowd favorite. With bacon crumble, sweet ham, mushrooms, evaporated milk, cream of mushroom soup, all-purpose cream, and melty processed cheese, itβs a dish that doubles as comfort food and celebration food.
Filipino gatherings are all about abundance and sharing β€οΈ. Instead of serving pasta as a small portion, itβs made in big batches to feed family, friends, and the barkada. What makes this carbonara special?
Itβs not βauthenticβ Italian carbonara, but itβs authentically Filipino β and thatβs what makes it special.
Making this version is simple and straightforward. All you need is a large pot for pasta, a pan for the sauce, and a hungry crowd ready to dig in! π΄
π Donβt over-fry the bacon; keep it juicy.
π A splash of fish sauce adds umami depth.
π Swap proteins with chicken or sausage for variety.
π Top with quick-melt cheese and broil for an indulgent finish.
π Serve immediately for that creamy, clingy pasta texture.
This Filipino carbonara isnβt just pasta; itβs a party dish. Youβll see it during birthdays, holidays, or when the family just wants to treat themselves to something hearty and comforting.
So the next time youβre planning a Pinoy feast, skip the debate about authenticity and go for what truly matters β delicious, creamy pasta that brings people together. β€οΈππ΅π
