One-pot creamy chorizo tomato pasta is a fast comfort dish where the pasta cooks in a rich, flavorful broth and finishes with pesto, cream cheese, and burrata.
Cooking the pasta with tomatoes and chorizo builds flavor into the noodles, while the stock paste concentrates savory depth. Cream cheese and pesto create a silky, cohesive sauce without extra steps.
Chorizo brings smoky richness, cherry tomatoes add sweetness, and basil keeps it fresh. Burrata melts into the hot pasta for a creamy finish.
Add everything to the pot, simmer until the pasta is tender, then stir in the pesto and cream cheese. Finish with burrata and serve immediately.
This is best served fresh. If you reheat, add a splash of water to loosen the sauce.

Stir once or twice to prevent sticking as the pasta cooks.
Add a splash of water if the pasta looks too dry before it is tender.
Tear the burrata over the top just before serving.

Cook for 20 to 25 minutes, stirring occasionally, until the pasta is al dente and liquid is mostly absorbed.
Stir in red pesto, cream cheese, remaining basil, salt, and pepper until glossy.
Place burrata in the center and serve immediately.
