Swap chicken with shrimp for a seafood twist.
Skip blue cheese if you want a milder taste—mozzarella and cheddar work too.
No oven? Cook pasta and sauce on the stovetop, then top with cheese and cover until melted.

Sauté onion, garlic, and mushrooms in olive oil.
Add shredded chicken, season with Cajun spice, lemon juice, salt, and pepper.
Stir in tomato sauce, chicken broth, and cream. Add water if needed to thin.
Melt butter in a pan, stir in flour, and cook into a roux.
Slowly whisk in evaporated milk until smooth.
