Chicken Sotanghon Soup

Chicken sotanghon is a Filipino glass noodle soup built around a light savory broth, garlic, onion, shredded chicken, and sotanghon noodles. Some versions stay very simple, while others add carrots, cabbage, mushrooms, or more peppery seasoning depending on the household.

This version keeps the base generic and no-brand. It uses annatto seeds for color if you want that classic warm orange tint, but the soup still makes sense without them.

What Traditional Sotanghon Usually Has

The traditional backbone is usually garlic, onion, broth, chicken, and sotanghon. Fish sauce or salt seasons the broth, and black pepper often finishes it.

Vegetables are common, but not required. A lot of home-style bowls use only a small amount of carrot or cabbage, and some skip vegetables entirely when the goal is a simpler, lighter soup.

Why You Do Not Need a Marinade Here

Because the chicken is shredded into the broth rather than stir-fried or grilled, a marinade is usually not necessary. The bigger issue is cooking the breast too hard.

If you want the chicken to stay soft, poach it gently instead of boiling it aggressively. Shred it while it is still slightly warm, then return it to the soup only long enough to heat through.

How to Make It

Start by gently poaching the chicken and setting it aside to shred. Then build the soup base with oil, garlic, onion, and optionally annatto oil for color.

Once the broth is simmering, add any vegetables you want, then stir in the shredded chicken and sotanghon near the end. The noodles cook quickly and keep absorbing liquid, so the soup is best served soon after they soften.

Tips, Variations, and Storage

If you want a more traditional yellow-orange look, use annatto seeds. If you do not have them, the flavor profile is still fine without that step.

Chicken thigh is a good swap if you want an even softer, richer result. You can also add mushrooms, celery, or a little cabbage if you want more body in the soup.

Leftovers keep in the fridge, but sotanghon will continue soaking up broth. If you plan to store it, keep extra hot stock or water ready for reheating.

Serving & Goal Fit

One serving is 1 bowl of soup. This works well as a lighter main, especially if you want something warm and high in protein without being too heavy.

On training days, pair it with rice or pandesal if you want more carbohydrate. On rest days, the soup as written can stand on its own or with extra vegetables.

Easy vegetable additions include cabbage, carrots, mushrooms, spinach, or malunggay if you want a more substantial bowl.

Poach the Chicken

    Place the chicken breast in a saucepan with the water and a small pinch of salt.

    Bring just to a gentle simmer, then lower the heat and cook for 10 to 12 minutes until the chicken is cooked through.

    Lift out the chicken, let it cool slightly, then shred it into bite-size strands.

    Reserve the poaching liquid if you want to use it as part of the soup base.

Soup Base

    Heat the oil in a soup pot over medium heat. If using annatto seeds, add them and let them tint the oil for 30 to 60 seconds, then strain them out.

    Saute the garlic and onion until fragrant and the onion softens.

    Pour in the chicken stock, or use a mix of stock and reserved poaching liquid, then bring to a gentle simmer.

    Season with fish sauce and black pepper.

Optional Vegetables and Finish

    Add the carrot and cabbage if using, then simmer for 2 to 3 minutes until just tender.
