Use day-old rice for best texture.

Debone and flake the tinapa. Set aside.
Mince the garlic and chop onions and spring onions.
Heat oil in a pan or wok over medium heat.
Sauté garlic until golden and fragrant.
Add red onions and cook until soft.
Add the flaked tinapa and stir-fry for 1–2 minutes until lightly crisped.
Add the rice, breaking apart any clumps with the spatula.
Drizzle in soy sauce and calamansi juice. Mix well to combine.
Stir in chopped spring onions and cook for another 2 minutes.
