Tapsilog is one of those breakfast plates that feels complete the moment it hits the table. The salty-sweet beef, garlic rice, and egg cover everything you want in one meal: richness, sharpness, and something hearty enough to carry the rest of the day.
The tapa does most of the heavy lifting here, so the marinade matters. It should season the beef deeply without making it taste harsh, which is why the balance of soy sauce, citrus, sugar, and garlic is more important than any one ingredient on its own.
This is also a practical meal-prep recipe. Once the beef is marinated, the rest of the plate comes together quickly, which makes it useful for both weekday breakfasts and bigger weekend silog spreads.
Thin slicing is important because tapa cooks fast. If the pieces are too thick, they can dry out on the outside before the center finishes.
A longer marinade gives the beef more flavor, but you still want to cook it over enough heat to caramelize the edges. That combination is what gives tapa its familiar savory, slightly sticky finish.
Serve the beef with garlic fried rice and a fried egg for the most classic tapsilog plate. Pickled papaya, sliced tomatoes, or spiced vinegar fit well on the side.
Marinated beef keeps well in the fridge for a couple of days and can also be frozen in portions. Cook straight from thawed marinade for the best flavor.

Cut the beef into thin slices.
In a blender, combine soy sauce, salt, black pepper, sugar, garlic (with skin), calamansi juice, baking soda, and cola or apple juice. Blend until smooth.
Pour the marinade over the beef. Make sure each piece is well-coated. Let it marinate for at least 2 hours or overnight.
Heat oil in a frying pan over medium heat.
Add the marinated beef and cook until browned, approximately 10–15 minutes.
Serve hot with garlic fried rice and egg.
