The method is straightforward: bread the cheese, freeze it, air fry it, then coat it in the hot glaze. The freeze step is the one that really matters, because it gives the crust time to set in the air fryer before the interior turns molten.

Freeze the breaded sticks until very firm so the cheese stays inside the coating.
Spray the coating lightly rather than heavily for better browning.

Mix the breadcrumbs with salt, smoked paprika, garlic powder, and chili powder.
Coat each mozzarella stick in flour, then egg, then flour again, then egg again, and finally breadcrumbs.
Transfer to a tray and freeze until very firm, about 1 hour.
Heat the air fryer to 190C (375F).

The freezer step matters. Mine held together perfectly and browned really well in the air fryer.
