Creamy sausage and mushroom pasta is built for nights when you want something filling without setting aside much time for prep. The sausage brings most of the seasoning, the mushrooms add depth, and the sauce comes together once the cream reduces around everything in the pan.
It is a straightforward comfort-food pasta, but it still benefits from a little attention to timing. If the pasta finishes just as the sauce thickens, the starch on the noodles helps everything cling together instead of sitting in a pool of cream.
The dish is rich enough to stand on its own, though a small salad or simple greens on the side can make the plate feel more balanced.
Browning the sausage first gives the sauce a stronger savory base, especially once the mushrooms start to absorb the rendered fat and the cream goes in.
It also helps to stop the pasta just shy of fully soft. A quick finish in the sauce lets the noodles absorb some of the liquid and keeps the final texture from feeling heavy.
Serve this as soon as the pasta is coated and glossy. If it sits too long, the sauce will tighten as it cools.

Boil pasta in a large pot of salted water until al dente. Drain and set aside.
In a large pan, melt butter and saute garlic until fragrant.
Add onion and bell peppers, then cook until soft.
Add sausage and cook until browned.
Stir in mushrooms and mix well.
Pour in cream and season with salt, pepper, and cayenne. Simmer until thickened.
Add cooked pasta to the sauce and mix until evenly coated.
Top with cheese and chopped parsley before serving.
