A cinnamon-forward ice cream with churro-style pieces and sweet spice woven through the base for a dessert-inspired scoop.
This flavor is less about heat and more about sweet spice. Cinnamon should come through first, followed by buttery pastry notes and a soft vanilla finish from the base.
The churro pieces are there to echo the original dessert, but the ice cream still needs a strong cinnamon identity even before the mix-ins go in. That keeps the flavor recognizable in every scoop.
Texture is the main technical challenge. Churro-style pieces and sugar additions soften quickly in frozen dairy, so they need to be added late and stored cold.
Serve this with a drizzle of caramel or a light dusting of extra cinnamon sugar if you want a more obvious dessert effect, but the base should still stand on its own.

Toss churro bites in cinnamon sugar before folding them in.
Use Ceylon cinnamon for a sweet, aromatic finish.
Add a caramel swirl for extra indulgence.

Whisk 2 tbsp milk with cornstarch to make a slurry.
In another bowl, whisk softened cream cheese and salt until smooth.
In a saucepan, combine remaining milk, cream, sugar, corn syrup, and cinnamon.
Bring to a rolling boil for 4 minutes.
Remove from heat, whisk in cornstarch slurry, and return to boil for 1 minute until thickened.
Slowly whisk hot mixture into cream cheese until smooth.
Chill base in an ice bath for 30 minutes.
Pour into ice cream maker and churn until creamy.
Fold in churro bites and sprinkle with cinnamon sugar.
Transfer to container, press parchment against surface, and freeze at least 4 hours.
